“Food Fit for a World Heritage Site”

I’ve worked for Shimadzu Limited for 7 years as a chef in the restaurants. Originally I did a completely different job, but I loved cooking so I decided to make a career change. I thought that there aren’t many opportunities to work at a place like Sengan-en, so I decided to accept the offer made to me by Shimadzu Limited. I’m very proud that we were made into a World Heritage Site back in 2015.
We begin the day with a morning meeting then check the reservations for the restaurant. The customers start arriving at around 11am. After the days orders have been completed we check and prepare for the reservations for the next week.

“Building Skills for the Future”

By studying under the more experienced chefs and the head chef I’ve learned a lot of skills which I can put to good use in my daily work. Of course I make mistakes sometimes, but the improvement I can achieve from learning is very satisfying.
I want to polish my skills and gain enough experience to eventually start my own business in the future. I still have a lot to learn before I’m ready to do that, so for the moment I’m working hard on learning as much as I can.

仕事へのやりがい

Japanese food was recently registered on the UNESCO Intangible Cultural Heritage list, so that has motivated me to promote traditional Kagoshima food to foreign visitors to Japan. Sengan-en is the perfect environment to promote the food of Kagoshima to the world.
